Science of Processed Foods Presented by Dominic Vellucci Principal Scientist at Kraft Foods with multiple patents in preparing a natural sweetener from a heat-processed powdered fruit extract of the cucurbitaceae family, such as luo han guo and multiple patents in food processing. This four day summer institute will provide an opportunity for high school science teachers to observe significant teaching demonstrations, laboratory activities related to food science, and its relationship to the science curriculum. During the institute topics like sweetener science , starches, carbohydrate science and the science of processed foods will be discussed. The objective of the course is to develop food science as an anticipatory setting for lesson topics like intermolecular attractions, polymer chemistry, bonding and many more useful connections.
